This is the first recipe that is going on My Minimalist Soul and O.M.G am I excited about it. While my blog is about soulful wellness it might be a little confusing as to why I’m adding recipes. I’m not going to the food blog side, don’t worry!
Food has always been somewhat of a best friend enemy to me. I love it. But if I’m not careful, I gain weight like crazy. After having Munchkin, this is even more true. When it was time for him to start having solid foods, I quickly decided that I would make him his food. It’s fun and he get’s excited when he hears the food processor.
It’s also cheaper, and for a mama on a budget, that is a necessity. Being on a budget means that I usually have a ton of random ingredients in my kitchen with little direction as to what to make from them. And while I despise cooking (or at least I used to), I’ve found a way to really embrace my creative side.
Apparently with also being an intuitive coach, I’m an intuition cook. I love to look at my plethora of random ingredients and they tend to just tell me what would go good together. And it *usually* works!
The Story Behind Green Bean Pesto Pasta
Being that I make Munchkin’s food, I have frozen veggies of all sorts. The other day, I decided that I wanted to make him some green beans. They’re green. They’re healthy. Let’s do it! Right? No. I was wrong. I let the bag thaw and immediately popped them in the food processor. That’s right. I forgot to actually cook them. Sorry Munchkin! He had sweet potatoes instead so he didn’t mind.
But that left me with quite a bit of mushy green beans.
What to do with an excessive amount of uncooked, mushy green beans. *Lightbulb* I have cream cheese. This could work.
So there you have it; the birth of Green Bean Pesto Pasta!
Green Bean Pesto Pasta
Delicious Green Bean Pesto Pasta that's quick, easy to make, and perfect for rainy days!
- 1 box Pasta of your choice *Smaller noodles like bowtie are perfect*
- 7 tbsp Cream cheese
- 4 tbsp Butter *I used vegan butter*
- 1 cup Water *Can also use milk for extra creaminess*
- 1 cup Uncooked, minced green beans *I put mine through the food processor*
- 2.5 tbsp Fresh minced garlic
- 1 tsp Turmeric *Not necessary*
Red pepper flakes, salt, and parsley to taste
- 1 cup Mushrooms *Add more as you like, I used handfuls*
While pasta is cooking, melt cream cheese and butter in a large saucepan. Once melted, add water (or milk/cream), green beans, garlic, and spices. This should take about 10 minutes total on medium heat.
Cover and let simmer for another 10 minutes. Taste test to see if you'd like to add more spices. At this time, add the mushrooms. Add more cream cheese or milk for added creaminess as well.
Let simmer for an additional 5 minutes covered. Add the pasta and enjoy!
